Ev sahibi Özcan Kulaksız, ceviz tohumlarını yıllar önce tek tek kendi ekmiş, onları çocuk yetiştirir gibi yetiştirmiş. Sertifikalı organik tarım yapan Özcan Bey, memleketi Yelek kasabasına örnek olmak istiyor. Ev sahibinden çiftliğe oldukça yakın olan Yelek'i gezdirmesini ve çiftliğinde bulunan tarımsal/ geleneksel eşyaların sergilendiği entnoğrafya müzesini göstermesini rica edebilirsiniz.
Kaman'ın bozkırın ortasında olmasına aldanmayın, yüzmeye gidebileceğiniz plajları bile var! Savcılı ve Toklumen plajları çiftliğe sadece 10 km ötede bulunmaktadır.
Çiftlikte hem konuklar ve hem de gönüllüler aynı anda bulunabileceklerinden konuklar ve gönüllüler yemeklerini ayrı ayrı yemektedir. Eğer gönüllü ve konuk sayısı az olursa birlikte yiyebilir. Gönüllüler sofrayı diğer çalışanlarla paylaşabilir veya işletme yetkilisinin vereceği malzemelerle kendileri pişirebilirler.
Özcan Kulaksız çiftliğini şöyle anlatıyor:
Çiftliğimiz, 1994 yılında ülkemizde ünüyle tanınan Kaman Cevizi üretimi amacıyla kurulmuş olup daha sonraki yıllarda ürün çeşitliliğini artırmasıyla, bugün itibariyle 260 dönümü organik meyve ve sebze üretimi için ve 600 dönümü de organik hububat, bakliyat üretimi için olmak üzere toplam 860 dönümlük araziye sahiptir. Organik tarım kapsamında yaklaşık yetişmiş ve yetişmekte olan toplam 2800 adet ceviz ağacı bulunmaktadır. Bunun yanında badem, elma, armut, kayısı, üzüm, vişne, kiraz, ayva, domates, patlıcan, biber, salatalık gibi sebzeler ve bakliyat çeşitleri gibi iklime uygun ürünler yetiştirilmektedir. Ayrıca kestane, incir, nar, böğürtlen gibi meyvelerin üretilebilmesi için gerekli çalışmalar devam ediyor. Çiftliğimizde yetişen elma başta olmak üzere tüm meyvelerden sirke üretimi ve meyve kurusu yapılmaktadır.
Aile çiftliğimizde, sabit çalışanlar yanında ihtiyaca göre mevsimlik işçiler de çalışmaktadır.
Evin bir tanesinde ortak kullanıma açık mutfak, gönüllülerin kalacağı iki oda, banyo, wc ve dinlenme salonu ve ayrıca evin ön tarafında yaz aylarında yemek yenilen büyük bir veranda bulunmaktadır. Üçüncü evin üst katında yine gönüllülerin kalacağı iki oda, banyo, wc ve ayrıca dinlenmek amaçlı büyük bir şark odası mevcuttur.
Ayrıca çiftliğimize 2017 yılında bir restoran ve fırın binası inşa edilmiştir.. Restoranın ana menüsü kiremitte balık ve bunun yanında, tandır, pide çeşitleri ve diğer yöresel yemeklerdir. Konuklarımız özellikle odun ateşiyle yanan taş fırında kiremitlerde pişirilen balıkları ve yanında verilen organik sebze salatası ve fırından çıkan sıcak lavaşları tatmaktan büyük keyif almaktadırlar. Restoran binasının içinde bir de çiftliğimizde üretilen tüm organik ürünlerin teşhir edildiği ve satışa sunulduğu bir market bulunuyor. (Restoran 2024 sezonu kapalı olacak.)
En önemlisi de son kırk yıldan beri biriktirdiğimiz ve aileden kalan geleneksel tarım aletleri, mutfak gereçleri ve zanaatkarların kullandığı el aletlerinin sergilendiği bir etnografik müze konseptinde büyük bir kapalı alan mevcuttur.
Cevizbağı Organik Tarım Çiftliğinde üretilen ürünlerin tamamı Ankara Çayyolu ve Ayrancı ile İstanbul Şişli'de kurulan organik pazarlarda ve bu illerdeki organik ya da doğal ürünleri satan butik marketlerde tüketicilere arz ediliyor.
Cevizbağı Organik Tarım Çiftliği olarak amacımız Kaman cevizinin organik tarım kapsamında üretilmesine devam etmek ve bu yönde yeni kapama ceviz bahçeleri kurmak, organik tarım çalışmaları kapsamında çevreye örnek bir işletme olmak, organik tarımın yaygınlaşması için gerekli çalışmaları yapmak. Ayrıca bu tür işletmelerde duyulan kalifiye eleman (çiftlik yöneticisi, kahya gibi) yetiştirilmesi için gerekli uygulamalı eğitim kurumu açmak. Tipik bir Anadolu köyünden oluşan beldemizi tarım turizmine kavuşturarak yerli halkın kalkınmasına katkıda bulunmak.
Çiftliğimiz üç ayrı katagoride misafir kabul etmektedir.
Birincisi sadece tatil amaçlı ücreti mukabilinde yemek ve konaklama hizmeti alanlar kabulü;
İkincisi ise yarı gönüllü diye tabir ettiğimiz,sadece yarım ücret ödeyerek yarım gün çiftlik işlerinde yardımcı olmak isteyenlerin kabülü;
Üçüncüsü ise tamamen gönüllülük kapsamında ücretsiz konaklama ve yemek hizmeti alarak,tam gün çiftlik işlerinde yardımcı olmak isteyenlerin kabulü.

MART: Organik pazar ürün hazırlama, hava şartlarına göre ağaçlarda ilkbahar bakımı, sebze tohumlarının viyollere ekimi, gübreleme.

ENGLISH:
The owner of the house, Özcan Kulaksız, planted the walnut seeds himself years ago, one by one, and raised them like raising children. Mr. Özcan, who practices certified organic farming, wants to set an example for his hometown of . You can definitely ask him to show you around Yelek, which is quite close to the farm, and to show you the entnography museum where agricultural / traditional items are exhibited. Despite the fact that Kaman is in the middle of the steppe, there are even beaches where you can go swimming! Savcılı and Toklumen beaches are only 10 km away from the farm. Since both guests and volunteers can be at the farm at the same time, guests and volunteers eat their meals separately. If there are few volunteers and guests, they may have the chance to eat together. Volunteers can share the table with other staff members or cook it themselves with the ingredients provided by the management.
Özcan Kulaksız describes his farm as follows:
Our farm was established in 1994 for the production of Kaman Walnut, which is well-known in our country, and in the following years, with the increase in product diversity, as of today, it has a total of 860 acres of land, 260 acres for organic fruit and vegetable production and 600 acres for organic grain and legume production. Within the scope of organic agriculture, there are approximately 2800 walnut trees grown and growing. In addition, products suitable for the climate such as almonds, apples, pears, apricots, grapes, sour cherries, cherries, quince, tomatoes, eggplants, peppers, cucumbers, vegetables and legumes are grown. In addition, necessary works are in progress to produce fruits such as chestnuts, figs, pomegranates and blackberries. Vinegar production and fruit drying are made from all fruits grown in our farm, especially apples.
Our family farm employs permanent employees as well as seasonal workers on an as-needed basis.
One of the three detached houses on the farm has a motel concept with the hosts on the upper floor, guests in four suites on the lower floor, the farm administrative office on the ground floor, organic product packaging and organic product warehouses and a cold storage for fruits. One of the houses has a communal kitchen, two rooms for volunteers, a bathroom, a wc and a lounge area, as well as a large veranda in front of the house where meals are eaten in the summer. The third house has permanent staff on the ground floor. On the upper floor, there are two rooms for volunteers, bathroom, wc and a large oriental room for relaxation.
Most importantly, there is a large indoor area in the concept of an ethnographic museum where the traditional agricultural tools, kitchen utensils and hand tools used by artisans that we have accumulated over the last forty years and that have been passed down through the family are exhibited.
All of the products produced at Cevizbağı Organic Farm are offered to consumers in organic markets in Çayyolu and Ayrancı in Ankara and Şişli in Istanbul, as well as in boutique markets selling organic or natural products in these cities.
As Cevizbağı Organic Agriculture Farm, our aim is to continue the production of Kaman walnuts within the scope of organic agriculture and to establish new closed walnut gardens in this direction, to be an exemplary business in the environment within the scope of organic agriculture studies, to carry out the necessary studies for the spread of organic agriculture. In addition, to open a practical training institution for the training of qualified personnel (such as farm managers, butlers) needed in such enterprises. To contribute to the development of the local people by bringing agricultural tourism to our town, which consists of a typical Anatolian village.
VOLUNTEER WORK:
JAN-FEB: Walnut cracking and packaging for organic market and online product orders, pulses preparation and packaging, vinegar filling.
MARCH: Preparing products for the organic market, spring maintenance of trees according to weather conditions, sowing of vegetable seeds in vials, fertilization.
APRIL: pruning of trees, liming of tree trunks, sowing seeds of potatoes, onions, beans, pruning of vineyards. MAY: Soil preparation for vegetables, planting seedlings, sowing carrot seeds. This was my first WWOOF experience, and I can't recommend it enough. I spent a little less than two weeks with Özcan, his sister, his son, Zeinulha, Döner, and Perya, and everyone was kind and welcoming. The room I stayed in was clean and very pleasant, as was the bathroom I had access to.
It should be noted that only he and his son speak English; Nurya (his sister) speaks German, the rest of the staff speak exclusively Turkish, but this isn't a problem, as gestures and smiles are understandable in all languages.
For those who might be interested, I encourage you to plan ahead with your needs (hygiene products, guilty pleasures, cigarettes, etc.) as the farm is somewhat out of the way.
The work I was able to do was quite physical, so make sure you're in good shape if you want to visit Özcan's place. During my various workdays, I was able to:
- Harvest tomatoes, peppers, and beans
- Install irrigation pipes
- Participate in the major cleanup of the Anatolish (traditional tea room)
- Cut down dead trees to prepare the wood for winter
- Prune trees
Although minimal work is expected, I was able to go for a hike or take some time for myself when I felt the need.
In any case, if this farm is on your route, go for it!

I spent around a week on Özcans farm. It was beautiful. I would reccommend this farm for couples and friends. In case future woofers find the following important: there are currently only men on the farm (unless there are other volunteers), they struggled a bit with vegetarian options

I stayed for two weeks in Özcan farm and I had a really great time. Özcan is a very welcoming person, he makes you feel at home. His wife is also very nice and an excellent cooker ! The farm is on the slope of a hill and has a beautiful panorama which allows to see all the typical landscape of central anatolia. Moreover, working with the farm employees and other volonteers was a very interesting experiences as they are all very friendly. Also the work in the farm was diversify, I could do different tasks so I was not bored. Thank you Özcan for these two weeks !

I stayed here for two weeks. I had a great time!
Özcan and his wife Aysa are so sweet. Zeynullah and Doner were very friendly, too. I really enjoyed working with them. We shared our languages, cultures and knowledge.
While I was there, I organised a watering system, planted some vegetables and tilled the soil. It was hard work because it was hot during the day.
I also had a special experience with Bayramı. It's a major holiday in Turkey. Family and relatives celebrate it together. His family members were friendly and kind. We shared the sheep and broke it up. The time the family spent together was very peaceful and happy.
Ayse is a brilliant chef. Every meal was delicious. I ate twice as much as usual as a result. I was fortunate to get to stay here while Aysa was in Kaman.
I'd love to come back in winter. I'm looking forward to seeing them in Japan.

My time at Özcan's was amazing! It was my first woofing experience and I loved it. Özcan is a very kind and generous man who knows how to make you feel at home!
I was supposed to come only for 4-5 days but I enjoyed the farm and Özcan and Zeynullah's company so much that I actually stayed two weeks. During these two weeks, we did the pruning of the walnut trees, collected the branches and used them to fertilize the soil, prepared the seedings, etc. But Özcan was also very dedicated in showing me turkish culture which I really appreciated. So he took the time to bring me to the pazar, to make me experience turkish hospitality for Bayram, to give me turkish cuisine lessons, etc. And finally he also helped me improve my turkish speaking skills, which was one of the aim of my visit.
Overall my stay was great and I will definitely come back one day, hopefully during the summer months because the farm must be even more beautiful at that time! Thanks again for everything!
